Ingredients

  • 1 pound boneless chicken thighs
  • 3 tablespoons white miso paste
  • 3 tablespoons honey
  • 2 tablespoons freshly grated ginger
  • 2 cloves garlic, minced
  • 3 cups low-sodium chicken broth
  • 1 cup short-grain white rice, uncooked
  • 1 bunch broccolini, trimmed
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon neutral cooking oil


Instructions

  1. Cook the rice according to package instructions until fluffy and tender, then keep warm.
  2. In a small bowl, whisk together the honey, miso paste, soy sauce, and garlic until smooth.
  3. Heat the cooking oil in a skillet over medium heat. Add the chicken and cook for 4 to 5 minutes per side, brushing generously with the honey miso mixture as it cooks.
  4. Remove the chicken once cooked through and let it rest briefly before slicing.
  5. In a saucepan, bring the chicken broth and grated ginger to a gentle simmer for 8 to 10 minutes. Stir in the sesame oil.
  6. Steam or blanch the broccolini until just tender and bright green.
  7. To serve, divide rice between bowls, ladle ginger broth over the rice, top with sliced honey miso chicken and broccolini.

  • Taste the broth and adjust ginger strength by simmering a few minutes longer if desired.
