Description
A cozy, savory-sweet rice bowl made with tender honey miso chicken, fluffy rice, vibrant greens, and a warming ginger-infused broth that soaks into every bite.
Ingredients
Scale
- 1 pound boneless chicken thighs
- 3 tablespoons white miso paste
- 3 tablespoons honey
- 2 tablespoons freshly grated ginger
- 2 cloves garlic, minced
- 3 cups low-sodium chicken broth
- 1 cup short-grain white rice, uncooked
- 1 bunch broccolini, trimmed
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon neutral cooking oil
Instructions
- Cook the rice according to package instructions until fluffy and tender, then keep warm.
- In a small bowl, whisk together the honey, miso paste, soy sauce, and garlic until smooth.
- Heat the cooking oil in a skillet over medium heat. Add the chicken and cook for 4 to 5 minutes per side, brushing generously with the honey miso mixture as it cooks.
- Remove the chicken once cooked through and let it rest briefly before slicing.
- In a saucepan, bring the chicken broth and grated ginger to a gentle simmer for 8 to 10 minutes. Stir in the sesame oil.
- Steam or blanch the broccolini until just tender and bright green.
- To serve, divide rice between bowls, ladle ginger broth over the rice, top with sliced honey miso chicken and broccolini.
Notes
- Taste the broth and adjust ginger strength by simmering a few minutes longer if desired.
- This dish reheats well and is perfect for meal prep.
- For extra depth, spoon a little extra glaze from the skillet over the chicken before serving.
