- 4 boneless chicken thighs
- 1 cup buttermilk
- 1 1/2 cups all-purpose flour
- 1/4 cup cornstarch
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Neutral oil for frying
- 4 brioche buns, toasted
- 8–12 pickle slices
- 2 cups coleslaw mix
- 1/3 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1/3 cup hot honey
Instructions
- Marinate chicken thighs in buttermilk with salt and pepper for at least 30 minutes.
- In a separate bowl, mix flour, cornstarch, garlic powder, paprika, salt, and pepper.
- Heat oil in a skillet over medium heat to 350°F.
- Remove chicken from marinade, dredge in seasoned flour, pressing firmly for a thick coating.
- Fry chicken 5–7 minutes per side until golden and crispy. Let rest on wire rack.
- In a small bowl, mix coleslaw mix, mayo, vinegar, salt, and pepper.
- Warm hot honey in a small saucepan or microwave.
- Assemble burgers: bottom bun, slaw, crispy chicken, pickles, hot honey drizzle, top bun. Serve immediately.
