- 1/2 cup (115g) unsalted butter, cold and cubed
- 1/4 cup (50g) granulated sugar
- 1 large egg yolk
- 2–3 tablespoons cold water
- 1 cup (250g) ricotta cheese, well-drained
- 1/2 cup (50g) ground almonds (almond meal)
- 1/2 cup (100g) granulated sugar
- 2 large eggs
- 1 teaspoon almond extract
- 1 teaspoon lemon zest
- 2 tablespoons honey
- 2 tablespoons sliced almonds (for topping)
- Powdered sugar, for dusting
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch tart pan.
- In a bowl, combine flour and sugar. Cut in cold butter until the mixture resembles coarse crumbs.
- Add egg yolk and cold water, mixing until dough comes together. Form into a disk, wrap, and chill for 30 minutes.
- Roll out the chilled dough and press it into the prepared tart pan. Prick the base with a fork and bake for 10 minutes. Remove and let cool slightly.
- In a separate bowl, mix ricotta cheese, ground almonds, sugar, eggs, almond extract, lemon zest, and honey until smooth.
- Pour the ricotta-almond mixture into the crust, smoothing the top.
- Sprinkle with sliced almonds and bake for 30–35 minutes, or until the filling is set and lightly golden.
- Allow to cool completely, then dust with powdered sugar before serving.
Notes
- For extra flavor, add a splash of Amaretto liqueur to the filling.
- Ensure ricotta is well-drained to avoid a watery filling.
- This tart tastes even better after chilling for a few hours.
