Jack-o-Lantern Rice Cake Treats are a fun, festive Halloween snack made with crispy rice cereal, marshmallows, and a hint of pumpkin spice, shaped and decorated like mini pumpkins. Kid-friendly, no-bake, and perfect for parties or spooky lunchboxes.


Ingredients

  • 3 tablespoons unsalted butter
  • 200 grams (about 4 cups) mini marshmallows
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon orange food coloring gel
  • 180 grams (about 6 cups) crispy rice cereal
  • Green candy melts or green licorice (for stems)
  • Black icing gel (for faces)
  • Non-stick spray or butter (for shaping)


Instructions

  1. In a large pot over low heat, melt the butter. Add mini marshmallows and stir until fully melted and smooth.
  2. Stir in pumpkin pie spice and orange food coloring until evenly combined.
  3. Remove from heat and quickly stir in the crispy rice cereal until fully coated.
  4. Lightly coat your hands with butter or non-stick spray. Scoop and shape mixture into small pumpkin-sized balls.
  5. Insert a green candy melt or licorice piece on top of each as the stem.
  6. Once cooled, use black icing gel to draw jack-o-lantern faces.
  7. Let set completely before serving or packaging.

Notes

  • Work quickly when shaping — the mixture sets fast.
  • Use gloves or buttered plastic wrap to avoid sticky hands.
  • Store in an airtight container at room temperature for up to 3 days.
