Description

A hearty and flavorful twist on the classic Caesar, this Kale Caesar with Crispy Chickpeas brings creamy dressing, crunchy textures, and bold savory flavors all in one bowl.


Ingredients

  • Kale: 1 large bunch, stems removed and chopped
  • Chickpeas: 1 can (15 oz), drained and rinsed
  • Parmesan cheese: ½ cup, shaved
  • Bread (for croutons): 2 cups, cubed
  • Olive oil: 3 tablespoons
  • Lemon juice: 2 tablespoons
  • Garlic: 1 clove
  • Dijon mustard: 1 teaspoon
  • Anchovy paste (optional): 1 teaspoon
  • Greek yogurt: ⅓ cup
  • Salt and pepper: To taste


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss chickpeas with olive oil, salt, and pepper. Cube bread and drizzle with oil separately.
  3. Spread chickpeas and croutons on the baking sheet, keeping them separate.
  4. Roast chickpeas for 25 to 30 minutes, shaking halfway through. Roast croutons for 10 to 12 minutes.
  5. In a blender or bowl, mix Greek yogurt, lemon juice, Dijon mustard, garlic, and optional anchovy paste until smooth.
  6. Massage kale with a bit of olive oil and salt until softened.
  7. Toss kale with dressing, croutons, and parmesan.
  8. Top with crispy chickpeas and a squeeze of lemon. Serve immediately.
