Ingredients
- Kale: 1 large bunch, stems removed and chopped
- Chickpeas: 1 can (15 oz), drained and rinsed
- Parmesan cheese: ½ cup, shaved
- Bread (for croutons): 2 cups, cubed
- Olive oil: 3 tablespoons
- Lemon juice: 2 tablespoons
- Garlic: 1 clove
- Dijon mustard: 1 teaspoon
- Anchovy paste (optional): 1 teaspoon
- Greek yogurt: ⅓ cup
- Salt and pepper: To taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss chickpeas with olive oil, salt, and pepper. Cube bread and drizzle with oil separately.
- Spread chickpeas and croutons on the baking sheet, keeping them separate.
- Roast chickpeas for 25 to 30 minutes, shaking halfway through. Roast croutons for 10 to 12 minutes.
- In a blender or bowl, mix Greek yogurt, lemon juice, Dijon mustard, garlic, and optional anchovy paste until smooth.
- Massage kale with a bit of olive oil and salt until softened.
- Toss kale with dressing, croutons, and parmesan.
- Top with crispy chickpeas and a squeeze of lemon. Serve immediately.
