Description

A fresh and flavorful lemon garlic salmon tray bake with tender salmon, roasted vegetables, and bright citrus notes.


Ingredients

Scale
  • 4 salmon fillets (150 to 180 g each)
  • 3 tablespoons olive oil
  • 4 garlic cloves, thinly sliced
  • 1 large lemon, sliced
  • 300 g baby potatoes, halved
  • 1 medium zucchini, sliced
  • 1 cup cherry tomatoes
  • 1/2 teaspoon cooking salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh parsley, chopped


Instructions

  1. Preheat oven to 200°C (390°F).
  2. Mix olive oil, garlic, salt, pepper, and oregano.
  3. Toss potatoes, zucchini, and tomatoes with half the mixture on a baking tray.
  4. Place salmon on top and brush with remaining mixture.
  5. Add lemon slices over and around the salmon.
  6. Bake for 20 to 25 minutes until cooked through.
  7. Finish with parsley and serve.

Notes

  • Use fresh lemon for best flavor
  • Do not overcook salmon
  • Cut vegetables evenly
