  • 1 cup shredded cheddar cheese

Instructions

  1. In a large pot over medium heat, cook chopped bacon until crispy. Remove with a slotted spoon and set aside, leaving about 1 tablespoon of bacon drippings in the pot.
  2. Add diced onion to the pot and sauté until softened, about 3 minutes. Stir in minced garlic and cook for 1 minute.
  3. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 10–15 minutes.
  4. In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes to form a roux.

  6. Pour the milk mixture into the potato pot and stir to combine.
  7. Add shredded cheddar cheese, sour cream, salt, pepper, and smoked paprika, stirring until cheese is melted and soup is creamy.
  8. Adjust seasoning to taste.
