These Mexican Beef Enchiladas are a hearty, flavor-packed dish featuring seasoned ground beef, zesty enchilada sauce, and gooey cheese rolled into soft tortillas and baked until bubbly. Perfect for weeknights or festive gatherings.

- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup tomato sauce
- 2 cups enchilada sauce
- 8–10 medium flour or corn tortillas
- 1 cup cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large skillet, cook ground beef over medium heat until browned. Add onion and garlic, and cook until softened.
- Stir in chili powder, cumin, paprika, salt, and pepper. Add tomato sauce and mix thoroughly. Remove from heat.
- Spread 1/2 cup enchilada sauce on the bottom of the baking dish.
- Spoon beef mixture into each tortilla, roll tightly, and place seam-side down in the dish.
- Pour remaining enchilada sauce over the rolled tortillas. Top with both cheeses.
- Cover with foil and bake for 20 minutes. Uncover and bake an additional 10 minutes until cheese is bubbly and golden.
- Let rest for 5 minutes, garnish with chopped cilantro, and serve warm.
Notes
- Warm tortillas before rolling to prevent cracking.
- Use freshly grated cheese for best melting.
- Let enchiladas rest before serving to thicken the sauce.
