A fresh and colorful pasta salad packed with crisp vegetables, creamy feta, and a light lemon dressing, perfect for quick meals or gatherings.


Ingredients

  • 12 ounces pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Bring a large pot of salted water to a boil and cook pasta until tender.
  2. Drain and rinse pasta with cold water.
  3. Transfer pasta to a large bowl.
  4. Add tomatoes, cucumber, bell pepper, onion, olives, and feta.
  5. Mix olive oil, lemon juice, salt, and pepper.
  6. Pour dressing over salad and toss gently.
  7. Top with parsley and chill before serving.
