Description

Creamy, cheesy, and loaded with tender broccoli, this One Pot Broccoli Cheese Orzo is the perfect comfort dish made simple — all in one pot and ready in under 30 minutes.

Ingredients

Scale
  • 1 cup Orzo Pasta
  • 2 cups Broccoli Florets, chopped small
  • ½ cup Yellow Onion, finely diced
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive Oil
  • 2 ½ cups Vegetable Broth
  • ½ cup Milk
  • 1 ½ cups Sharp Cheddar Cheese, shredded
  • ¼ cup Parmesan Cheese, grated
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • Pinch of Red Chili Flakes (optional)

Instructions

  1. Place a large saucepan or Dutch oven over medium heat.
  2. Add olive oil and sauté onions for 2–3 minutes until soft. Add garlic and cook for 30 seconds.
  3. Stir in orzo, coating it in the aromatics. Pour in broth, milk, salt, and pepper. Stir well.
  4. Bring to a gentle simmer. Add chopped broccoli. Cook uncovered for 10–12 minutes, stirring frequently, until orzo is tender.
  5. Turn off heat and stir in cheddar and Parmesan until melted and creamy. Add red chili flakes if desired.
  6. Adjust seasoning to taste and stir in more milk if needed for extra creaminess.
  7. Spoon into bowls and serve warm. Garnish as desired.

Notes

  • Use freshly grated cheese for the best melt and flavor.
  • Chop broccoli small so it cooks evenly with the orzo.
  • Stir frequently to prevent sticking and ensure creaminess.
  • Store leftovers in the fridge for up to 4 days; reheat with a splash of milk.
