- 1 cup Orzo Pasta
- 2 cups Broccoli Florets, chopped small
- ½ cup Yellow Onion, finely diced
- 2 cloves Garlic, minced
- 1 tablespoon Olive Oil
- 2 ½ cups Vegetable Broth
- ½ cup Milk
- 1 ½ cups Sharp Cheddar Cheese, shredded
- ¼ cup Parmesan Cheese, grated
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
- Pinch of Red Chili Flakes (optional)
Instructions
- Place a large saucepan or Dutch oven over medium heat.
- Add olive oil and sauté onions for 2–3 minutes until soft. Add garlic and cook for 30 seconds.
- Stir in orzo, coating it in the aromatics. Pour in broth, milk, salt, and pepper. Stir well.
- Bring to a gentle simmer. Add chopped broccoli. Cook uncovered for 10–12 minutes, stirring frequently, until orzo is tender.
- Turn off heat and stir in cheddar and Parmesan until melted and creamy. Add red chili flakes if desired.
- Adjust seasoning to taste and stir in more milk if needed for extra creaminess.
- Spoon into bowls and serve warm. Garnish as desired.
