  • 2 tablespoons olive oil
  • 1 cup panko breadcrumbs
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 12 ounces elbow macaroni
  • 2 cups shredded mozzarella cheese
  • 1 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 cup marinara sauce
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat oven to 375°F and ensure pot is oven-safe.
  2. Season chicken with salt and pepper. Heat olive oil in the pot, cook chicken until golden and cooked through, then set aside.
  3. In the same pot, melt butter and whisk in flour to create a roux. Gradually add milk and cream until smooth.
  4. Stir in uncooked macaroni, garlic powder, mozzarella, parmesan, and marinara. Return chicken to the pot and mix well.
  5. Simmer until pasta is tender and sauce thickens, about 10–12 minutes.
  6. Top with breadcrumbs and extra parmesan. Bake uncovered for 15 minutes, then broil 2–3 minutes until golden.
  7. Garnish with parsley and serve.
