- 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 1 cup panko breadcrumbs
- 4 tablespoons unsalted butter
- 4 tablespoons all-purpose flour
- 3 cups whole milk
- 1 cup heavy cream
- 12 ounces elbow macaroni
- 2 cups shredded mozzarella cheese
- 1 cup grated parmesan cheese
- 1 teaspoon garlic powder
- 1 cup marinara sauce
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 375°F and ensure pot is oven-safe.
- Season chicken with salt and pepper. Heat olive oil in the pot, cook chicken until golden and cooked through, then set aside.
- In the same pot, melt butter and whisk in flour to create a roux. Gradually add milk and cream until smooth.
- Stir in uncooked macaroni, garlic powder, mozzarella, parmesan, and marinara. Return chicken to the pot and mix well.
- Simmer until pasta is tender and sauce thickens, about 10–12 minutes.
- Top with breadcrumbs and extra parmesan. Bake uncovered for 15 minutes, then broil 2–3 minutes until golden.
- Garnish with parsley and serve.
