- 1 cup orzo pasta
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5 minutes until softened. Add garlic and cook 1 more minute.
- Add lentils, orzo, vegetable broth, salt, and pepper. Stir to combine.
- Bring to a gentle boil, then reduce to a simmer. Cook uncovered for 15–20 minutes, stirring occasionally, until lentils and orzo are tender.
- Remove from heat, stir in chopped parsley, and adjust seasoning to taste.
- Serve warm, garnished with additional parsley or a drizzle of olive oil if desired.
