Description

A creamy, cozy one-skillet meal made with orzo pasta, savory chicken sausage, juicy cherry tomatoes, and melted Boursin cheese. Perfect for busy weeknights or casual entertaining.


Ingredients

  • 1 tablespoon olive oil
  • 12 ounces chicken sausage, sliced
  • 3 cloves garlic, minced
  • 1 ½ cups orzo pasta (uncooked)
  • 3 cups chicken broth
  • 1 pint cherry tomatoes
  • 1 (5.2 oz) round Boursin cheese (Garlic & Fine Herbs)
  • ½ cup shredded Parmesan cheese
  • ¼ cup fresh parsley, chopped
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C) if finishing in the oven.
  2. In a large oven-safe skillet, heat olive oil over medium heat. Add sliced chicken sausage and cook for 5 minutes until browned. Stir in garlic and cook for 1 minute.
  3. Add orzo and toast for 2 minutes, stirring frequently. Pour in chicken broth and bring to a simmer.
  4. Add cherry tomatoes and let orzo cook uncovered for 10–12 minutes, stirring occasionally, until al dente and most liquid is absorbed.
  5. Break Boursin cheese into chunks and scatter across the surface. Gently stir to partially melt. Sprinkle Parmesan on top.
  6. If using oven, transfer skillet and bake uncovered for 5–7 minutes until bubbling and golden. Otherwise, cover and finish on stovetop for 3–4 minutes.
  7. Remove from heat and sprinkle with fresh parsley.
  8. Serve warm straight from the skillet.

Notes

  • To make it vegetarian, substitute sausage with sautéed mushrooms or chickpeas.
  • Don’t overcook the orzo — keep it just al dente.
  • Add a squeeze of lemon juice for brightness before serving.
  • Store leftovers in an airtight container for up to 3 days.
