Description

Ingredients

  • 1 medium baguette, sliced into ½-inch pieces
  • 4 ripe Roma tomatoes, finely diced
  • ¼ cup fresh basil, chopped
  • ½ cup parmesan cheese, freshly grated
  • 2 tablespoons olive oil
  • 1 large garlic clove, peeled
  • Salt and black pepper, to taste


Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix diced tomatoes, chopped basil, olive oil, salt, and pepper. Let sit for 15 minutes to meld flavors.
  3. Arrange baguette slices on the baking sheet in a single layer.
  4. Toast the baguette slices in the oven for 6 to 8 minutes or until golden and crisp. Rub each slice with the garlic clove while still warm.
  5. Spoon the tomato mixture onto each toasted slice.
  6. Top with freshly grated parmesan and serve immediately.
