Description

  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 can (14 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 2 cans (15 ounces each) cannellini beans, drained and rinsed
  • 1 cup dry ditalini pasta
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup grated parmesan cheese (for serving)


Instructions

  1. Heat a large pot over medium heat and add the olive oil.
  2. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until softened.
  3. Stir in the minced garlic and cook for 30 seconds until fragrant.
  4. Add the tomato paste and cook for 1 minute, stirring to deepen the flavor.
  5. Pour in the diced tomatoes and vegetable broth. Stir well to combine.
  6. Add the cannellini beans, dried oregano, dried basil, salt, and black pepper. Bring to a gentle simmer.
  7. Stir in the ditalini pasta and cook for 10 to 12 minutes until the pasta is tender but still slightly firm.
  8. Stir in the fresh parsley. Taste and adjust seasoning if needed.
  9. Ladle into bowls and top with grated parmesan cheese before serving.

Notes

  • Cook the pasta just until al dente to prevent it from becoming mushy.
  • If the soup thickens too much, add a splash of vegetable broth before serving.
