- 1/4 cup cream cheese, softened
- 1 tablespoon brown sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/3 cup chopped pecans, toasted
- 1 graham cracker sheet, crushed
- Pinch of salt
Instructions
- In a small bowl, mix softened cream cheese, brown sugar, vanilla extract, cinnamon, and salt until smooth. Fold in half of the chopped pecans.
- Slice each Medjool date on one side to open and remove the pit if not already pitted.
- Fill each date with a spoonful of the pecan mixture using a small spoon or piping bag.
- Top with remaining chopped pecans and a sprinkle of crushed graham cracker.
- Optional: Warm the stuffed dates in a skillet for 1–2 minutes before serving.
- Serve at room temperature and enjoy!
