- 1 cup brown sugar
- ¾ cup unsalted butter, softened
- 3 large eggs
- 1 ½ teaspoons baking powder
- 1 teaspoon cinnamon powder
- ½ teaspoon nutmeg powder
- ¼ cup milk
- 1 teaspoon vanilla extract
- 1 ½ cups mixed dried fruits (raisins, cranberries, cherries)
- 1 tablespoon orange zest
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line your cake pan with parchment paper.
- Cream the butter and brown sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract and orange zest.
- Sift together the flour, baking powder, cinnamon, nutmeg, and salt in a separate bowl.
- Gradually fold the dry ingredients into the wet mixture. Add milk and fold in the soaked dried fruits.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 45 to 50 minutes or until a skewer inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
