- 1 cup pumpkin puree
- 2 cups rolled oats
- 1/2 cup vanilla protein powder
- 1/2 cup peanut butter
- 1/4 cup honey
- 2 tablespoons chia seeds
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon vanilla extract
Instructions
- In a bowl, mix pumpkin puree, peanut butter, honey, and vanilla extract until smooth.
- Add rolled oats, protein powder, chia seeds, cinnamon, and nutmeg.
- Stir until a thick dough forms.
- Scoop small portions and roll into balls.
- Place on a tray and refrigerate for 20 minutes.
- Serve chilled or at room temperature.
Notes
- Chill mixture before rolling for easier handling
- Add more oats if too sticky
