Ingredients

  • 4 medium potatoes, peeled and chopped
  • 1 whole garlic head
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat oven to 200°C.
  2. Slice the top off the garlic head, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 35 minutes.
  3. Heat remaining olive oil in a large pot and sauté chopped onion until soft.
  4. Add chopped potatoes and vegetable broth, then bring to a boil.
  5. Reduce heat and simmer for 20 minutes until potatoes are tender.
  6. Squeeze roasted garlic into the pot.
  7. Blend the soup until smooth.
  8. Stir in heavy cream, salt, and pepper.
  9. Serve warm, garnished with parsley.
