- 4 medium potatoes, peeled and chopped
- 1 whole garlic head
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 4 cups vegetable broth
- 1/2 cup heavy cream

- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat oven to 200°C.
- Slice the top off the garlic head, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 35 minutes.
- Heat remaining olive oil in a large pot and sauté chopped onion until soft.
- Add chopped potatoes and vegetable broth, then bring to a boil.
- Reduce heat and simmer for 20 minutes until potatoes are tender.
- Squeeze roasted garlic into the pot.
- Blend the soup until smooth.
- Stir in heavy cream, salt, and pepper.
- Serve warm, garnished with parsley.
