Description

Elegant, sweet, and savory roasted pears paired with creamy blue cheese and crunchy pistachios. A gourmet appetizer or light dessert that’s as simple as it is stunning.


Ingredients

  • 3 ripe pears, halved and cored
  • 1 tablespoon olive oil
  • Pinch of salt
  • ½ cup crumbled blue cheese
  • ⅓ cup shelled pistachios, roughly chopped
  • 12 tablespoons honey or balsamic glaze (optional)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking dish or tray with parchment paper or lightly grease it.
  2. Halve and core the pears. Brush the cut sides with olive oil and sprinkle with a pinch of salt.
  3. Place the pears cut-side up in the baking dish and roast for 20–25 minutes until tender and slightly caramelized.
  4. Meanwhile, toast pistachios in a dry skillet over low heat for 2–3 minutes if not already roasted.
  5. Remove pears from the oven and top with crumbled blue cheese and pistachios.
  6. Drizzle with honey or balsamic glaze if desired. Serve warm or at room temperature.

Notes

  • Use firm pears like Bosc or Anjou for best roasting results.
  • To make it milder, substitute blue cheese with goat cheese or brie.
  • Serve on a bed of arugula for a stunning salad appetizer.
