- 3 ripe pears, halved and cored
- 1 tablespoon olive oil
- Pinch of salt
- ½ cup crumbled blue cheese
- ⅓ cup shelled pistachios, roughly chopped
- 1–2 tablespoons honey or balsamic glaze (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking dish or tray with parchment paper or lightly grease it.
- Halve and core the pears. Brush the cut sides with olive oil and sprinkle with a pinch of salt.
- Place the pears cut-side up in the baking dish and roast for 20–25 minutes until tender and slightly caramelized.
- Meanwhile, toast pistachios in a dry skillet over low heat for 2–3 minutes if not already roasted.
- Remove pears from the oven and top with crumbled blue cheese and pistachios.
- Drizzle with honey or balsamic glaze if desired. Serve warm or at room temperature.
Notes
- Use firm pears like Bosc or Anjou for best roasting results.
- To make it milder, substitute blue cheese with goat cheese or brie.
- Serve on a bed of arugula for a stunning salad appetizer.
