These Rotel Cream Cheese Sausage Balls are golden, gooey, and loaded with zesty flavor from diced tomatoes and chilies, wrapped in a cheesy, savory bite. Perfect for parties or a cozy snack, they’re quick to make and even quicker to disappear!


Ingredients

  • 1 pound ground sausage
  • 8 ounces cream cheese, softened
  • 1 can Rotel diced tomatoes with green chilies, drained
  • 1 ½ cups Bisquick baking mix
  • 2 cups shredded Mexican cheese blend


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the softened cream cheese, ground sausage, and drained Rotel tomatoes and chilies until well mixed.
  3. Add the Bisquick mix and shredded cheese, and continue mixing until fully combined into a thick dough-like texture.
  4. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet, spacing them slightly apart.
  5. Bake for 18–20 minutes, or until golden brown and cooked through.
  6. Let them cool slightly before serving warm.

Notes

  • Use hot sausage for an extra spicy kick.
  • Make ahead and freeze raw balls to bake later when needed.
  • Drain the Rotel well to avoid excess moisture in the dough.
