- 1 can Rotel diced tomatoes with green chilies, drained
- 1 ½ cups Bisquick baking mix
- 2 cups shredded Mexican cheese blend
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the softened cream cheese, ground sausage, and drained Rotel tomatoes and chilies until well mixed.
- Add the Bisquick mix and shredded cheese, and continue mixing until fully combined into a thick dough-like texture.
- Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet, spacing them slightly apart.
- Bake for 18–20 minutes, or until golden brown and cooked through.
- Let them cool slightly before serving warm.
Notes
- Use hot sausage for an extra spicy kick.
- Make ahead and freeze raw balls to bake later when needed.
- Drain the Rotel well to avoid excess moisture in the dough.
- Pair with ranch or spicy dipping sauce for added flavor.
