Description
A fresh and elegant salad made with peppery arugula, warm caramelized pear slices, creamy buratta, and toasted walnuts, finished with a light balsamic dressing. Sweet, savory, and beautifully balanced.

- 2 medium ripe pears, sliced
- 1 tablespoon unsalted butter
- 1 tablespoon brown sugar
- 4 cups fresh arugula
- 1 ball buratta cheese, about 8 ounces
- 1/3 cup toasted walnuts, roughly chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic glaze
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Place a skillet over medium heat and allow it to warm up.
- In a small bowl, mix olive oil, balsamic glaze, salt, and black pepper until well combined.
- Add butter to the warm skillet and let it melt completely.
- Add sliced pears to the skillet and sprinkle with brown sugar. Cook for 3 to 4 minutes per side until golden and caramelized. Remove from heat and let cool slightly.
- In a large bowl, gently toss the arugula with the prepared dressing.
- Arrange the dressed arugula on a serving platter. Top with caramelized pears.
- Tear open the buratta and place it in the center of the salad. Sprinkle with toasted walnuts.
- Drizzle with a little extra balsamic glaze if desired and serve immediately.
Notes
- Bring the buratta to room temperature before serving for the creamiest texture.
- Toast walnuts in a dry skillet for 3 to 4 minutes to enhance their flavor.
- Do not overdress the greens to keep them fresh and crisp.
- Caramelized pears can be prepared a day in advance and stored in the refrigerator.
