Description

Sausage Breakfast Casserole is a hearty and flavorful morning dish combining fluffy eggs, rich breakfast sausage, melted cheddar cheese, and fresh vegetables, all layered with bread cubes and baked until golden and set. Perfect for easy preparation, make-ahead convenience, and satisfying breakfasts, brunches, or quick dinners.

Ingredients

Scale

Meat & Dairy

  • 1 lb ground breakfast sausage
  • 8 large eggs
  • 1 cup milk or cream
  • 1 1/2 cups shredded cheddar cheese (or cheese blend)

Vegetables

  • 1/2 cup chopped onion
  • 1/2 cup chopped bell peppers (any color)

Other Ingredients & Seasonings

  • 4 cups frozen or fresh bread cubes (preferably day-old bread)
  • 1/2 teaspoon garlic powder or 2 cloves fresh garlic, minced
  • Salt, to taste (about 1 teaspoon)
  • Ground black pepper, to taste (about 1/2 teaspoon)

Instructions

  1. Cook the Sausage: Brown the ground breakfast sausage in a skillet over medium heat until fully cooked and nicely crumbled. Drain any excess fat to prevent the casserole from becoming greasy.
  2. Prepare the Vegetables: In the same skillet, sauté the chopped onions and bell peppers until soft and fragrant. Combine the cooked vegetables with the browned sausage for a flavorful mixture.
  3. Mix the Egg Base: In a bowl, whisk together the eggs, milk or cream, garlic powder (or fresh garlic), salt, and pepper until smooth and evenly combined to create the custard-like mixture.
  4. Assemble the Casserole: Grease a baking dish. Spread the bread cubes evenly in the dish, then layer the sausage and vegetable mixture over the top. Sprinkle the shredded cheese evenly over all.
  5. Pour the Egg Mixture: Slowly pour the egg and milk mixture over the layered ingredients, allowing the bread cubes to soak it up for perfect custard-style texture.
  6. Bake Until Golden: Bake the casserole in a preheated oven at 350°F (175°C) for 45 to 50 minutes, until the casserole is puffed, golden brown, and set in the center. A knife inserted into the center should come out clean.

Notes

  • Use day-old bread for better absorption of the egg mixture and a custard-like texture.
  • Gently fold ingredients to keep layers distinct and maintain an airy casserole.
  • Let the casserole rest for 10 minutes before slicing for cleaner portions.
  • Combine sharp and mild cheeses for added depth of flavor.
  • Try variations like vegetarian swaps, spicy additions, or gluten-free bread replacements to customize.
