A vibrant and flavor-packed salad with juicy glazed sesame chicken, crisp vegetables, sweet mandarin oranges, and a tangy sesame dressing that brings it all together.


Ingredients

  • 1 pound chicken thighs, boneless and skinless
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon sesame oil
  • 4 cups mixed greens
  • 1 cup red cabbage, thinly sliced
  • 1 cup carrots, shredded
  • 1 cup mandarin oranges, canned and drained
  • 1 cup wonton strips
  • 2 tablespoons toasted sesame seeds


Instructions

  1. Heat a nonstick skillet over medium heat.
  2. In a small bowl, whisk together soy sauce, honey, rice vinegar, garlic, ginger, and sesame oil.
  3. Add a splash of oil to the skillet and cook the chicken thighs until golden and cooked through, about 6-8 minutes per side.
  4. Pour the sauce over the chicken and let it simmer until thickened.
  5. Let the chicken rest for 5 minutes, then slice into bite-sized pieces.
  6. In a large bowl, toss together mixed greens, red cabbage, carrots, and mandarin oranges.
  7. Top with sliced chicken, wonton strips, and toasted sesame seeds.
  8. Drizzle extra dressing if desired and serve immediately.
