- 1 pound raw shrimp, peeled and deveined
- 3 tablespoons lime juice
- 2 tablespoons olive oil
- ¼ cup fresh cilantro, chopped
- ½ teaspoon garlic powder
- ½ teaspoon cumin
- ½ teaspoon smoked paprika
- 1½ cups corn kernels (fresh or frozen)
- 1 small red bell pepper, diced
- 1 large avocado, sliced
- Salt and pepper, to taste
- Lime wedges, for serving
Instructions
- Heat a large skillet or grill pan over medium-high heat.
- In a bowl, combine shrimp with lime juice, olive oil, cilantro, garlic powder, cumin, smoked paprika, salt, and pepper. Let marinate for 10–15 minutes.
- Lightly oil the skillet and cook shrimp in a single layer for 2–3 minutes per side until opaque and lightly charred. Set aside.
- In the same pan, sauté corn and red bell pepper until just warmed through.
- Slice avocado and season lightly with salt.
- Assemble bowls with shrimp, corn mix, avocado, and lime wedges. Garnish with extra cilantro and lime zest.
