Description

A vibrant pasta dish featuring sweet Argentine prawns, juicy cherry tomatoes, and a touch of chili heat, all tossed with al dente spaghetti for a flavorful and satisfying meal.


Ingredients

  • 400g spaghetti
  • 500g Argentine prawns, peeled and deveined
  • 300g cherry tomatoes, halved
  • 4 cloves garlic, finely sliced
  • 1-2 fresh red chilies, thinly sliced
  • 5 tablespoons extra virgin olive oil
  • 1 small white onion, finely chopped
  • A handful of fresh parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste
  • ½ cup reserved pasta water


Instructions

  1. Bring a large pot of salted water to a boil and cook spaghetti until al dente. Reserve ½ cup of the pasta water before draining.
  2. Heat olive oil in a large skillet over medium heat. Add garlic, onion, and chili, sauté for 2–3 minutes until fragrant.
  3. Add cherry tomatoes and cook until they begin to blister and soften, about 5–7 minutes.
  4. Add the prawns and cook for 2–3 minutes per side, until just opaque.
  5. Add the cooked pasta to the skillet along with reserved pasta water and lemon juice. Toss everything together for 1–2 minutes.
  6. Finish with chopped parsley, extra olive oil, salt, and pepper. Serve hot.

Notes

  • Use fresh prawns if available for best flavor.
  • Finish the pasta in the sauce to help it absorb flavor.
