- 400g spaghetti
- 500g Argentine prawns, peeled and deveined
- 300g cherry tomatoes, halved
- 4 cloves garlic, finely sliced
- 1-2 fresh red chilies, thinly sliced
- 5 tablespoons extra virgin olive oil
- 1 small white onion, finely chopped
- A handful of fresh parsley, chopped
- Juice of 1 lemon
- Salt and pepper to taste
- ½ cup reserved pasta water
Instructions
- Bring a large pot of salted water to a boil and cook spaghetti until al dente. Reserve ½ cup of the pasta water before draining.
- Heat olive oil in a large skillet over medium heat. Add garlic, onion, and chili, sauté for 2–3 minutes until fragrant.
- Add cherry tomatoes and cook until they begin to blister and soften, about 5–7 minutes.
- Add the prawns and cook for 2–3 minutes per side, until just opaque.
- Add the cooked pasta to the skillet along with reserved pasta water and lemon juice. Toss everything together for 1–2 minutes.
- Finish with chopped parsley, extra olive oil, salt, and pepper. Serve hot.
Notes
- Use fresh prawns if available for best flavor.
- Finish the pasta in the sauce to help it absorb flavor.
- Adjust chili to control the heat level.
