Description

A warm and crispy panini filled with juicy spicy chicken and melted cheese, pressed until golden and packed with bold flavor that makes every bite satisfying and comforting.

Ingredients

Scale
  • 300 g boneless skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 120 g mozzarella cheese, shredded
  • 4 slices sourdough bread
  • 1 tablespoon butter

Instructions

  1. Preheat a skillet or panini press over medium heat.
  2. In a bowl, combine the chicken with olive oil, chili powder, paprika, garlic powder, salt, and black pepper.
  3. Add the seasoned chicken to the hot skillet and cook for 6 to 8 minutes, stirring occasionally, until fully cooked and lightly caramelized.
  4. Butter one side of each slice of bread.
  5. Assemble the sandwiches by layering cooked chicken and shredded mozzarella between two slices of bread, with buttered sides facing outward.
  6. Place the sandwiches on the skillet or panini press and cook until the bread is golden and the cheese is melted, flipping once if using a skillet.
  7. Remove from heat, let rest for one minute, then slice and serve warm.

Notes

  • Adjust the spice level by increasing or decreasing the chili powder.
  • Use freshly shredded cheese for better melting.
  • Let the sandwich rest briefly before slicing to keep the filling intact.
