- 300 g boneless skinless chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 0.5 teaspoon garlic powder
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 120 g mozzarella cheese, shredded
- 4 slices sourdough bread
- 1 tablespoon butter
Instructions
- Preheat a skillet or panini press over medium heat.
- In a bowl, combine the chicken with olive oil, chili powder, paprika, garlic powder, salt, and black pepper.
- Add the seasoned chicken to the hot skillet and cook for 6 to 8 minutes, stirring occasionally, until fully cooked and lightly caramelized.
- Butter one side of each slice of bread.
- Assemble the sandwiches by layering cooked chicken and shredded mozzarella between two slices of bread, with buttered sides facing outward.
- Place the sandwiches on the skillet or panini press and cook until the bread is golden and the cheese is melted, flipping once if using a skillet.
- Remove from heat, let rest for one minute, then slice and serve warm.
Notes
- Adjust the spice level by increasing or decreasing the chili powder.
- Use freshly shredded cheese for better melting.
- Let the sandwich rest briefly before slicing to keep the filling intact.
