Description

Spicy ramen and poached egg yolk is a bold, comforting noodle dish with chewy ramen coated in a savory spicy sauce and finished with a rich, silky egg yolk that melts into the noodles.

Ingredients

Scale
  • 200 g ramen noodles
  • 2 large eggs
  • 2 tablespoons soy sauce
  • 1 ½ tablespoons chili paste
  • 2 garlic cloves, minced
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 2 green onions, sliced
  • 1 teaspoon sesame seeds

Instructions

  1. Bring a medium pot of water to a gentle boil.
  2. Cook ramen noodles according to package instructions, then drain and set aside.
  3. In a small bowl, mix soy sauce, chili paste, garlic, sesame oil, and sugar until combined.
  4. Heat a skillet over low heat and toss the cooked noodles with the sauce until evenly coated.
  5. In the same pot of gently simmering water, carefully poach the eggs until the whites are set and yolks remain runny.
  6. Divide the spicy noodles between plates.
  7. Top each serving with a poached egg yolk.
  8. Garnish with green onions and sesame seeds, then serve immediately.

Notes

  • Keep poaching water below a boil for the best egg texture.
  • Add a splash of noodle water if the sauce feels too thick.
  • Adjust chili paste to control spice level.
