- 8 oz sushi-grade tuna, diced
- 2 cups cooked short-grain white rice
- 1 ripe avocado, sliced
- 1 small cucumber, thinly sliced
- 2 scallions, chopped
- A handful of fresh cilantro, chopped
- 2 tablespoons mayonnaise
- 1 tablespoon sriracha (adjust to taste)
- 1 tablespoon soy sauce
- 1 teaspoon rice vinegar
- 1 teaspoon sesame seeds
- Optional: lime wedges for serving
Instructions
- Start cooking your rice if it’s not already prepared. Short-grain white rice works best.
- In a bowl, mix the mayonnaise, sriracha, soy sauce, and rice vinegar to make the spicy mayo.
- Add the diced tuna to the spicy mayo mixture and toss gently to coat. Set aside to marinate briefly.
- Slice the avocado and cucumber, then chop the scallions and cilantro.
- In serving bowls, add a layer of rice, then arrange the spicy tuna, avocado, cucumber, scallions, and cilantro over the top.
- Sprinkle with sesame seeds and garnish with lime wedges if using.
