- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 cup (2 sticks) cold unsalted butter
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups fresh strawberries, chopped
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line a 9×9 baking pan with parchment paper.
- In a large bowl, mix flour, granulated sugar, brown sugar, baking powder, and salt.
- Cut in cold butter with a pastry cutter or fork until the mixture resembles coarse crumbs.
- Press two-thirds of the mixture into the bottom of the prepared pan.
- In another bowl, toss chopped strawberries with cornstarch, lemon juice, and vanilla.
- Spread the strawberry mixture evenly over the crust.
- Sprinkle the remaining crumb mixture on top and gently press down.
- Bake for 35 to 40 minutes or until golden and bubbling.
- Let cool completely before slicing into bars.
