These Strawberry Crumb Bars are a sweet and buttery treat with a juicy strawberry filling and a golden, crumbly topping. Perfect for brunch, snacks, or dessert, they’re simple to make and full of homemade charm.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 cup (2 sticks) cold unsalted butter
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups fresh strawberries, chopped
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×9 baking pan with parchment paper.
  2. In a large bowl, mix flour, granulated sugar, brown sugar, baking powder, and salt.
  3. Cut in cold butter with a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. Press two-thirds of the mixture into the bottom of the prepared pan.
  5. In another bowl, toss chopped strawberries with cornstarch, lemon juice, and vanilla.
  6. Spread the strawberry mixture evenly over the crust.
  7. Sprinkle the remaining crumb mixture on top and gently press down.
  8. Bake for 35 to 40 minutes or until golden and bubbling.
  9. Let cool completely before slicing into bars.

Notes

  • Cool completely before cutting for clean slices.
  • Use parchment paper for easy removal.
  • For extra flavor, add a pinch of cinnamon to the crumble.
