Description

A soft matcha cake with a gooey strawberry center that melts beautifully when cut, combining earthy and sweet flavors in every bite.


Ingredients

Scale
  • 1/4 cup all-purpose flour
  • 1 tablespoon matcha powder
  • 1/2 cup unsalted butter, melted
  • 1/3 cup granulated sugar
  • 2 large eggs
  • 2 egg yolks
  • 1 cup fresh strawberries, finely chopped
  • 1 teaspoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt


Instructions

  1. Preheat oven to 200°C and grease ramekins.
  2. Whisk butter, sugar, eggs, egg yolks, and vanilla until smooth.
  3. Dust ramekins lightly with flour.
  4. Fold in flour, matcha, and salt. Fill halfway, add strawberry mixture, then top with batter.
  5. Bake for 10 to 12 minutes until edges are set and center is soft.
  6. Let sit briefly, then loosen edges.
  7. Invert onto plate and serve warm.

Notes

  • Do not overbake to keep center molten
