These strawberry scones are buttery, tender, and packed with fresh strawberries. A perfect balance of sweet and crumbly, they’re ideal for breakfast, brunch, or a cozy snack.

- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and diced
- 1/2 cup heavy cream
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup fresh strawberries, chopped
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Cut in the cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
- Fold in the chopped strawberries gently.
- In a separate bowl, whisk together cream, egg, and vanilla.
- Pour the wet mixture into the dry and stir just until combined.
- Turn dough onto a floured surface, shape into a 1-inch thick circle, and cut into 8 wedges.
- Place scones on the baking sheet, brush tops with cream, and bake for 18–20 minutes.
- Let cool slightly and optionally drizzle with glaze before serving.
Notes
- Chill the dough before baking for better rise and shape.
- Toss strawberries with a bit of flour to prevent them from sinking.
- Use a serrated knife or bench scraper for cleaner cuts.
