- 3 cups mashed potatoes
- 1 cup shredded cheddar cheese, divided
- 1/4 cup grated Parmesan cheese
- 1/4 cup sour cream
- 1 large egg
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cooked bacon, crumbled
- 2 green onions, chopped
- Nonstick cooking spray
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a muffin tin with nonstick spray.
- In a bowl, combine mashed potatoes, 1/2 cup cheddar cheese, Parmesan cheese, sour cream, egg, garlic powder, salt, and black pepper. Mix until well combined.
- Spoon the potato mixture into the muffin tin, pressing with a spoon to create a nest shape with a hollow center.
- Bake the nests for 15 minutes, until they start to turn golden.
- Remove from the oven and fill the center of each nest with the remaining cheddar cheese, crumbled bacon, and chopped green onions.
- Return to the oven and bake for an additional 5–7 minutes, until cheese is melted and bubbly.
- Let cool for a few minutes before removing from the tin. Serve warm.
Notes
- Use leftover mashed potatoes to make this recipe even quicker.
- You can substitute bacon with cooked ham, turkey, or keep it vegetarian with sautéed veggies.
- For extra crispiness, broil for 1–2 minutes at the end of baking.
