- Slice the sweet potatoes thinly and evenly using a sharp knife or mandoline.
- Place the slices in a large bowl, add olive oil, sea salt, and paprika, then toss until evenly coated.
- Arrange the slices in a single layer on the prepared baking sheet without overlapping.
- Bake for 15 minutes, flip the slices, then bake for another 10 to 15 minutes until crisp and lightly golden.
- Remove from the oven and allow the chips to cool slightly before serving.
