A one-pan, wholesome dinner made with sweet potatoes, ground turkey, black beans, and melty cheese, seasoned with Tex-Mex spices and perfect for busy weeknights.

- 2 tablespoons olive oil
- 1 pound ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small yellow onion, chopped
- 3 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes with juices
- 1 cup frozen corn
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar or Mexican blend cheese
- 2 tablespoons fresh cilantro, chopped
Instructions
- Heat a large skillet over medium heat and add olive oil.
- Add diced sweet potatoes and sauté for 8–10 minutes until they begin to soften and brown.
- Push sweet potatoes to one side and add ground turkey. Cook until browned, breaking it apart as it cooks.
- Add onion, garlic, and bell peppers. Cook for 5 minutes until vegetables soften.
- Stir in black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
- Cover and simmer for 10 minutes, stirring occasionally.
- Sprinkle cheese on top, cover, and let it melt.
- Garnish with chopped cilantro and serve hot.
