Description

A one-pan, wholesome dinner made with sweet potatoes, ground turkey, black beans, and melty cheese, seasoned with Tex-Mex spices and perfect for busy weeknights.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with juices
  • 1 cup frozen corn
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar or Mexican blend cheese
  • 2 tablespoons fresh cilantro, chopped


Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Add diced sweet potatoes and sauté for 8–10 minutes until they begin to soften and brown.
  3. Push sweet potatoes to one side and add ground turkey. Cook until browned, breaking it apart as it cooks.
  4. Add onion, garlic, and bell peppers. Cook for 5 minutes until vegetables soften.
  5. Stir in black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
  6. Cover and simmer for 10 minutes, stirring occasionally.
  7. Sprinkle cheese on top, cover, and let it melt.
  8. Garnish with chopped cilantro and serve hot.

  • Cut sweet potatoes evenly for consistent cooking.
  • Use a large skillet to prevent overcrowding.
  • Top with avocado, sour cream, or lime for added flavor.
