- 2 pounds ripe tomatoes, chopped
- ¾ cup brown sugar
- ¼ cup apple cider vinegar
- 1 tablespoon fresh ginger, grated
- 2 garlic cloves, minced
- 1 teaspoon salt
- ¼ teaspoon ground cinnamon
- ¼ teaspoon red pepper flakes
Instructions
- Place chopped tomatoes, brown sugar, vinegar, ginger, garlic, salt, cinnamon, and red pepper flakes in a large saucepan.
- Stir well and bring to a boil over medium heat.
- Reduce heat to low and simmer uncovered for 45–60 minutes, stirring occasionally.
- Continue simmering until the jam is thick and glossy. Stir more frequently near the end to prevent sticking.
- Taste and adjust seasoning if needed. Remove from heat and let cool slightly.
- Spoon into clean jars. Store in the refrigerator or process for longer storage.
