Ingredients

  • 1 loaf baguette or rustic bread sliced
  • 2 cups diced fresh tomatoes
  • 1 cup diced fresh mozzarella
  • 1/4 cup chopped fresh basil
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat oven to 200°C.
  2. Mix tomatoes, mozzarella, basil, olive oil, garlic, salt, and pepper in a bowl.
  3. Arrange bread slices on a baking tray.
  4. Brush bread lightly with olive oil.
  5. Toast for 8 to 10 minutes until golden.
  6. Spoon tomato mixture over toasted bread.
  7. Serve immediately.

Notes

  • Use ripe tomatoes for best flavor
  • Assemble just before serving to avoid soggy bread
  • Add balsamic glaze for extra flavor
