- 2 cups cooked turkey, diced
- 1/2 cup celery, chopped
- 1/4 cup red onion, finely diced
- 1/2 cup red bell pepper, diced
- 1/3 cup carrot, grated
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 8 large lettuce leaves (romaine or butter)
Instructions
- Wash and dry the lettuce leaves, then set them aside.
- In a large mixing bowl, combine the diced turkey, celery, red onion, bell pepper, carrot, mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
- Mix until all ingredients are evenly coated and well combined.
- Lay the lettuce leaves flat and spoon a generous amount of the turkey salad into the center of each leaf.
- Fold the sides of the lettuce slightly and roll them up like a wrap or serve open-faced.
- Garnish with fresh herbs if desired and serve immediately.

- Chill the turkey salad for 15–20 minutes before serving for enhanced flavor.
- Use rotisserie turkey or chicken for convenience.
- Store the turkey salad mix in the fridge for up to 3 days.
