Turkish-style eggs, or çılbır, is a creamy, savory dish made with poached eggs served over garlicky yogurt and drizzled with spiced paprika butter. It’s the ultimate comfort breakfast that’s easy to make and bursting with flavor.

- 2 large eggs
- 1 cup plain Greek yogurt
- 1 garlic clove, minced
- 3 tablespoons butter
- 1 teaspoon paprika
- 1/2 teaspoon Aleppo pepper (or chili flakes)
- Salt, to taste
- 1 tablespoon white vinegar
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a medium pot of water to a gentle simmer and add the vinegar.
- In a bowl, mix the Greek yogurt with minced garlic and a pinch of salt. Set aside at room temperature.
- Crack eggs one at a time into small cups.
- Gently poach the eggs in simmering water for about 3 minutes until the whites are set and yolks remain soft.
- Meanwhile, melt the butter in a small saucepan. Stir in paprika and Aleppo pepper until fragrant, then remove from heat.
- Spread the garlic yogurt on a plate or shallow bowl.
- Place the poached eggs on top and drizzle with the spiced butter.
- Garnish with chopped parsley and a pinch of salt. Serve immediately.
