- 1 lb beef stew meat, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 2 medium potatoes, cubed
- 1 cup green beans, trimmed
- 1 cup corn kernels
- 1 can (14.5 oz) diced tomatoes
- 6 cups beef broth
- 2 cups egg noodles
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 bay leaf
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium-high heat. Brown the beef on all sides, then remove and set aside.
- In the same pot, sauté onion and garlic until fragrant.
- Add carrots, celery, and potatoes. Cook for 5 minutes, stirring occasionally.
- Return beef to the pot. Add green beans, corn, diced tomatoes, and beef broth.
- Season with thyme, oregano, bay leaf, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 1 hour or until beef is tender.
- Stir in egg noodles and cook uncovered for an additional 8-10 minutes until noodles are tender.
- Remove bay leaf, adjust seasoning if needed, and garnish with fresh parsley before serving.
Notes
- For extra depth of flavor, add a splash of Worcestershire sauce or soy sauce to the broth.
- Use wide egg noodles for a heartier texture.
- This soup freezes well—just cook the noodles separately when reheating.
- You can add spinach or kale at the end for extra greens.
