Description

Crispy Air Fryer Ground Beef Birria tacos filled with juicy seasoned beef, melted cheese, onions, and cilantro, served with rich smoky consommé for dipping.


Ingredients

  • 1 pound lean ground beef
  • 8 small corn tortillas
  • 2 cups shredded Oaxaca or mozzarella cheese
  • 1 small white onion, finely diced
  • 1/2 cup chopped fresh cilantro
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 3 cups beef broth
  • 4 dried guajillo chiles, seeded
  • 1 chipotle pepper in adobo
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • Lime wedges for serving


Instructions

  1. Preheat the air fryer to 400 degrees Fahrenheit for 5 minutes.
  2. Heat olive oil in a skillet over medium heat and cook the ground beef until browned.
  3. Add garlic, tomato paste, cumin, smoked paprika, oregano, salt, and black pepper. Stir well.
  4. Soak guajillo chiles in hot water for 10 minutes.
  5. Blend softened guajillo chiles, chipotle pepper, and beef broth until smooth.
  6. Pour the sauce into the skillet with the beef and simmer for 10 minutes.
  7. Dip each tortilla lightly into the consommé.
  8. Fill tortillas with beef mixture and shredded cheese, then fold.
  9. Place tacos into the air fryer basket and cook for 8 to 10 minutes, flipping halfway through.
  10. Top with diced onions and chopped cilantro.
  11. Serve warm with consommé and lime wedges.

Notes

  • Warm tortillas before folding to prevent cracking.
  • Freshly shredded cheese melts better than pre-shredded cheese.
  • Do not overcrowd the air fryer basket.
  • Keep extra consommé warm for dipping.
