A moist and tender blueberry banana bread packed with ripe bananas and juicy blueberries. Perfect for breakfast, snacks, or dessert.

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 medium ripe bananas, mashed
- 1/2 cup granulated sugar
- 1 large egg
- 1/3 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Whisk together flour, baking soda, and salt in a medium bowl.
- In another bowl, mash bananas and mix with sugar, egg, melted butter, and vanilla extract.
- Add dry ingredients to wet ingredients and stir until just combined.
- Fold in blueberries gently.
- Pour batter into prepared loaf pan.
- Bake for 55 minutes or until a toothpick inserted in the center comes out mostly clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve.
Notes
- Use very ripe bananas for best flavor.
- Toss blueberries in a little flour to reduce sinking.
- Do not overmix the batter.
- Store in an airtight container for up to 3 days.
