Description

A moist and tender blueberry banana bread packed with ripe bananas and juicy blueberries. Perfect for breakfast, snacks, or dessert.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 medium ripe bananas, mashed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/3 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Whisk together flour, baking soda, and salt in a medium bowl.
  3. In another bowl, mash bananas and mix with sugar, egg, melted butter, and vanilla extract.
  4. Add dry ingredients to wet ingredients and stir until just combined.
  5. Fold in blueberries gently.
  6. Pour batter into prepared loaf pan.
  7. Bake for 55 minutes or until a toothpick inserted in the center comes out mostly clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Slice and serve.

Notes

  • Use very ripe bananas for best flavor.
  • Toss blueberries in a little flour to reduce sinking.
  • Do not overmix the batter.
  • Store in an airtight container for up to 3 days.
