Ingredients

  • ½ cup chia seeds
  • 2 cups full-fat coconut milk
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 cup mango cubes
  • 1 sliced kiwi
  • ½ cup fresh berries
  • ¼ cup shredded coconut


Instructions

  1. Prepare clean serving jars or dessert cups.
  2. Whisk together chia seeds, coconut milk, maple syrup, vanilla extract, and salt in a mixing bowl.
  3. Let the mixture sit for 5 minutes, then stir again to prevent clumping.
  4. Divide the pudding mixture evenly into serving cups.
  5. Refrigerate for at least 4 hours or overnight until thickened.
  6. Top with mango cubes, kiwi slices, fresh berries, and shredded coconut.
  7. Serve chilled.

Notes

  • Use full-fat coconut milk for the creamiest texture.
  • Stir twice during the first few minutes to prevent clumping.
  • Add fruit toppings just before serving.
