Instructions
- Prepare clean serving jars or dessert cups.
- Whisk together chia seeds, coconut milk, maple syrup, vanilla extract, and salt in a mixing bowl.
- Let the mixture sit for 5 minutes, then stir again to prevent clumping.
- Divide the pudding mixture evenly into serving cups.
- Refrigerate for at least 4 hours or overnight until thickened.
- Top with mango cubes, kiwi slices, fresh berries, and shredded coconut.
- Serve chilled.
