Description

A soft and hearty cottage cheese and oat bread with a moist crumb and light golden crust, perfect for both sweet and savory servings.


Ingredients

Scale
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon honey
  • 2 tablespoons olive oil


Instructions

  1. Preheat oven to 180°C and grease a loaf pan.
  2. In a bowl, mix cottage cheese, eggs, milk, honey, and olive oil until smooth.
  3. In another bowl, combine oats, flour, baking powder, and salt.
  4. Gradually mix dry ingredients into wet ingredients until just combined.
  5. Pour batter into the loaf pan.
  6. Bake for 40 minutes until golden and set.
  7. Cool for 10 minutes, then transfer to a rack before slicing.

Notes

  • Do not overmix the batter
  • Use full-fat cottage cheese for best texture
  • Let batter rest briefly before baking
