Description

A fresh and crunchy pasta salad with crispy roasted pasta, vibrant vegetables, and a light tangy dressing.


Ingredients

Scale
  • 250 grams pasta
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes
  • 1 medium cucumber
  • 1 small red onion
  • 1/2 cup black olives
  • 100 grams feta cheese
  • 2 tablespoons fresh parsley
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat oven to 200°C.
  2. Toss cooked pasta with olive oil.
  3. Spread pasta on a baking sheet in a single layer.
  4. Roast until golden and crispy.
  5. Transfer pasta to a bowl.
  6. Add tomatoes, cucumber, onion, olives, and feta.
  7. Drizzle lemon juice and add parsley, salt, and pepper.
  8. Toss gently and serve.

Notes

  • Do not overcrowd the baking sheet
  • Let pasta cool slightly before mixing
  • Adjust seasoning before serving
