Ingredients

- 250 grams pasta
- 2 tablespoons olive oil
- 1 cup cherry tomatoes
- 1 medium cucumber
- 1 small red onion
- 1/2 cup black olives
- 100 grams feta cheese
- 2 tablespoons fresh parsley
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 200°C.
- Toss cooked pasta with olive oil.
- Spread pasta on a baking sheet in a single layer.
- Roast until golden and crispy.
- Transfer pasta to a bowl.
- Add tomatoes, cucumber, onion, olives, and feta.
- Drizzle lemon juice and add parsley, salt, and pepper.
- Toss gently and serve.
Notes
- Do not overcrowd the baking sheet
- Let pasta cool slightly before mixing
- Adjust seasoning before serving
