Crispy Rice Tuna Bites made with golden sushi rice squares topped with creamy spicy tuna, avocado, sesame seeds, and green onions for a restaurant-style appetizer.


Ingredients

  • 2 cups cooked sushi rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt divided
  • 3 tablespoons neutral oil
  • 8 ounces sushi-grade tuna, finely diced
  • 3 tablespoons mayonnaise
  • 1 tablespoon sriracha
  • 1 teaspoon soy sauce plus extra for serving
  • 1 teaspoon sesame oil
  • 1 avocado, sliced
  • 1 tablespoon sesame seeds
  • 2 tablespoons sliced green onions


Instructions

  1. Mix cooked sushi rice with rice vinegar, sugar, and 1/2 teaspoon salt.
  2. Press the rice into a parchment-lined baking dish and chill for at least 30 minutes.
  3. In a bowl combine diced tuna, mayonnaise, sriracha, soy sauce, sesame oil, and remaining salt.
  4. Slice the chilled rice into small squares or rectangles.
  5. Heat neutral oil in a nonstick skillet over medium heat.
  6. Cook the rice pieces for 3 to 4 minutes per side until golden and crisp.
  7. Top each crispy rice piece with spicy tuna mixture, avocado slices, sesame seeds, and green onions.
  8. Serve immediately with extra soy sauce if desired.

Notes

  • Chill the rice fully before slicing for cleaner shapes.
  • Use medium heat to crisp the rice evenly.
  • Assemble just before serving for maximum crunch.
  • Store the tuna mixture separately from the crispy rice.
