- 2 cups cooked sushi rice
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt divided
- 3 tablespoons neutral oil
- 8 ounces sushi-grade tuna, finely diced
- 3 tablespoons mayonnaise
- 1 tablespoon sriracha
- 1 teaspoon soy sauce plus extra for serving
- 1 teaspoon sesame oil
- 1 avocado, sliced
- 1 tablespoon sesame seeds
- 2 tablespoons sliced green onions
Instructions
- Mix cooked sushi rice with rice vinegar, sugar, and 1/2 teaspoon salt.
- Press the rice into a parchment-lined baking dish and chill for at least 30 minutes.
- In a bowl combine diced tuna, mayonnaise, sriracha, soy sauce, sesame oil, and remaining salt.
- Slice the chilled rice into small squares or rectangles.
- Heat neutral oil in a nonstick skillet over medium heat.
- Cook the rice pieces for 3 to 4 minutes per side until golden and crisp.
- Top each crispy rice piece with spicy tuna mixture, avocado slices, sesame seeds, and green onions.
- Serve immediately with extra soy sauce if desired.
Notes
- Chill the rice fully before slicing for cleaner shapes.
- Use medium heat to crisp the rice evenly.
- Assemble just before serving for maximum crunch.
- Store the tuna mixture separately from the crispy rice.
