Ingredients

  • 2 medium chicken breast, sliced
  • 250 grams mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 2 tablespoons olive oil
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons parsley, chopped


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken with salt and pepper, then cook until lightly golden and set aside.
  3. In the same skillet, sauté onion, garlic, and mushrooms until softened.
  4. Add chicken broth and coconut milk, stir well.
  5. Return chicken to the skillet and simmer.
  6. Mix cornstarch with water, add to the skillet and stir until thickened.
  7. Garnish with parsley and serve warm.

Notes

  • Do not overcook the chicken to keep it tender
