- 2 medium chicken breast, sliced
- 250 grams mushrooms, sliced
- 3 cloves garlic, minced
- 1 small onion, chopped
- 2 tablespoons olive oil
- 1 cup coconut milk
- 1 cup chicken broth
- 1 tablespoon cornstarch
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons parsley, chopped
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken with salt and pepper, then cook until lightly golden and set aside.
- In the same skillet, sauté onion, garlic, and mushrooms until softened.
- Add chicken broth and coconut milk, stir well.
- Return chicken to the skillet and simmer.
- Mix cornstarch with water, add to the skillet and stir until thickened.
- Garnish with parsley and serve warm.
