  • 8 ounces sliced mushrooms
  • 1 cup plain full-fat Greek yogurt
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup low sodium chicken broth
  • 1 small onion, diced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and sliced mushrooms. Cook for 6 to 8 minutes until softened and golden.
  3. Stir in garlic, paprika, salt, and black pepper.
  4. Add sliced chicken and cook for 6 to 7 minutes until fully cooked and lightly browned.
  5. In a bowl, whisk together Greek yogurt and chicken broth until smooth.
  6. Reduce heat to low and slowly stir the yogurt mixture into the skillet.
  7. Cook gently for 2 to 3 minutes until warmed through and creamy.
  8. Sprinkle fresh parsley over the top and serve warm.
