Description

Tender chicken thighs cooked with caramelized mushrooms in a rich honey garlic sauce that is sweet, savory, glossy, and packed with comforting flavor.


Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 16 ounces sliced cremini mushrooms
  • 1/3 cup honey
  • 6 cloves garlic, minced
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 tablespoon cornstarch
  • 1/2 cup chicken broth
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Heat a large skillet over medium high heat.
  2. Whisk together honey, garlic, soy sauce, chicken broth, cornstarch, salt, and black pepper in a bowl.
  3. Add olive oil and butter to the skillet. Add mushrooms and cook for 6 to 7 minutes until golden brown.
  4. Remove mushrooms from the skillet temporarily. Add chicken thighs and cook for 5 to 6 minutes per side until golden and fully cooked.
  5. Return mushrooms to the skillet and pour in the sauce mixture.
  6. Simmer for 5 to 7 minutes until the sauce thickens and coats the chicken.
  7. Sprinkle parsley over the top and serve warm.

  • Do not overcrowd the skillet while browning the chicken.
  • Serve over rice or noodles to soak up the sauce.
