- 2 pounds boneless skinless chicken thighs
- 16 ounces sliced cremini mushrooms
- 1/3 cup honey
- 6 cloves garlic, minced
- 1/4 cup low sodium soy sauce
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 tablespoon cornstarch
- 1/2 cup chicken broth
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoons chopped fresh parsley
Instructions
- Heat a large skillet over medium high heat.
- Whisk together honey, garlic, soy sauce, chicken broth, cornstarch, salt, and black pepper in a bowl.
- Add olive oil and butter to the skillet. Add mushrooms and cook for 6 to 7 minutes until golden brown.
- Remove mushrooms from the skillet temporarily. Add chicken thighs and cook for 5 to 6 minutes per side until golden and fully cooked.
- Return mushrooms to the skillet and pour in the sauce mixture.
- Simmer for 5 to 7 minutes until the sauce thickens and coats the chicken.
- Sprinkle parsley over the top and serve warm.
