- 2 cups all-purpose flour
- 1 cup butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups chocolate chips
- 3 cups ice cream
Instructions
- Preheat oven to 180°C and line a baking tray
- Mix butter, sugars, eggs, and vanilla
- Add flour, baking soda, salt, and chocolate chips
- Scoop dough onto tray
- Bake for 10 to 12 minutes until golden
- Cool cookies completely
- Add ice cream between two cookies
- Freeze before serving
Notes
- Do not overbake cookies
- Use softened ice cream for easy assembly
- Freeze sandwiches for best texture
